I have here, a significant amount of bacon grease. Any ideas on what to do with it aside from simply tossing it?

Not sure if what you're thinking would work, because to get the grease in the balloons, would mean heating it up, which would heat up the balloons and cause them to break prematurely. Unless you're thinking of something else, in which case, do tell.
